“Soft and elegant on the nose and palate, and very well balanced. An incredibly drinkable whiskey. It was bottled at just the right time, based on its great balance of flavors. Notes of vanilla, coconut and creme brulee, provide a base for emerging notes of cedar wood shavings, cinnamon, soft mint and a hint of fennel.”

The newest WhistlePig Boss Hog release is out, and it’s a doozy. Like past years, WhistlePig Black Prince is a rye whiskey, although this time its original provenance is American (MGP) rather than Canadian. It’s 14 years old, and it spent some time resting in Armagnac casks (a brandy made from aromatic white grapes) before it was bottled at cask strength.

14 years old, 119.2 proof, 95% rye/5% malted barley. Finished in Armagnac casks, around 6,000 bottles made.

The Vermont Estate Oak Rye is a highly matured rye whiskey aged for 15 years, and finished in custom charred barrels made from Vermont White Oak trees logged on The WhistlePig’s Farm. Due to harsh winters and a shorter growing season, these trees possess a denser wood grain, imparting a nuanced and distinct flavor into the rye. The Vermont Oak Rye is the next step in WhistlePig’s mission to become fully farm-to-bottle, with the barrels coming from wood grown on the farm.

St. George Absinthe Verte is  the result of years of patient experimentation in herbal distillation.  Its complexity comes from teh use of fine brandy, star anise, mint, wormwood, lemon balm, hyssop, meadowsweet, basil, fennel, tarragon and stinging nettles.

St. George Absinthe Verte was developed over many years of experimenting with botanicals and distillation techniques. Made with only the highest quality natural components, this is a striking expression of absinthe: though the anise and wormwood are at the forefront, the nose and palate reveal a delicate complexity lent by meadowsweet, lemon balm, hyssop, fennel, tarragon, and stinging nettles. The addition of water creates an almost opalescent louche and subtly alters the palate as the lemon balm further reveals itself and a creamy character emerges.
